I’ve owned this grill for about a 1.5 years and it just keeps getting better. Why? Cast iron cooks beautifully when combined with smoke and flame. First of all, this grill is a hibachi - meaning that it has no lid. If you want to smoke or slow-cook your food, you can still do that with a little creativity. However, there isn’t enough space to really create a tiered fire of hot coals. What you’ll usually wind up with is a really hot center area and a less hot left and right edge. Once you get the hang of that, you’ll know how to rotate your grub as you flip it. Overall, you will be really impressed with the way this grill contains and focuses the heat of your coals for hours of cooking with each load of coals.
When you get this grill, be sure to also get a charcoal chimney (usually under $10) at any hardware store or KMart type place. With one of these, you’ll have the perfect amount of coals every time and you’ll never use lighter fluid again. You’ll also want a tin bucket that will fit on top of the grill surface (for smoking/slow cooking). You’ll also want some wood chips for smoking. And lastly, a grill topper is essential for sauteing veggies and shrimp because this grill has no lip and the topper will keep your grub from falling on the floor. If you don’t get any of these right off the bat, don’t worry. Adding toys slowly is a big part of the fun of grilling.
Now, I’m a vegetarian and my favorite thing to cook on this grill is zuchini slices (coated with EVOO, salt, pepper and garlic powde and then slighly charred on both sides). It’s probably one of the perfect foods of the world. However, my lady eats burgers, chicken and steak from time to time and I love to gill it for her. Also, I love to grill fish and shirmp and it has never tasted better than when seared with the awesome Lodge cast iron of this grill. Also, get brave and cook a pizza on this thing. Mine comes out perfect.
If you’re going to leave this outside in the elements, buy a cover at Amazon.com. Cast Iron will rust, althought the grill top will not seem to mind once it’s good and seasoned. Now, I keep a wire brush handy. But I DO NOT SCRAPE THE GRILL SURFACE. That’s how you ruin the cooking surface of cast iron. I only lightly sweap the metal once it’s hot to knock off bits of charred stuff. Also, go ahead and oil the whole thing with grapeseed oil or whatever to add to the nonstick effect of the cast iron and to protect against rust on the rest of it.
All in all, buy this thing and embark on a new hobby that will spoil you on perfectly cooked food to the point that restaurants pale in comparison.
