I purchased my WSM about 8 months ago, and I literally have only missed only about 5 weekends worth of smoking since I bought it. I have smoked so much meat, my WSM hardly has a chance to cool off before I’m lighting it up again.
The WSM is so easy to use and foolproof, it makes a GREAT first smoker for all people. I recommend using Kingsford briquettes for an even more foolproof smoking adventure.
The 3 bottom vents allow for slight adjusting when stabilizing the temperature. The single top vent should be left open at all times to allow the smoke to escape out the top.
The waterpan is very shallow and does not hold much water. I would recommend contacting Brinkmann and ordering their charcoal pan for about $10. Or if you have a Brinkmann smoker like I did, and only used it once like I did, steal the charcoal pan out of it. It makes a perfectly deep waterpan that will only need to be topped off after about 8 hours!
There are many modifications that can be done to the WSM, and many cooking and usage tips on a site http://www.virtualweberbullet.com. Be sure to visit this site for more ideas and tips as I would not have been as successful and addicted to smoking if I had not found that site. There are some great recipes on there.
