When I renovated my kitchen, I replace the old coil cooktop with an electric ceramic smoothtop. Unfortunately, oversized pots or pots with rippled bottoms can damage the smoothtop, so my regular water bath canner could not be used. I bought the electric turkey fryer at Costco, hoping I could use it to can jams %26 fruits. Well, it’s WONDERFUL for canning! The aluminum basket holds about 8 pint jars and is easily lowered or raised. I can adjust the water temperature to either a simmer or a rolling boil. The timer is handy. The drain spout is a great convenience. The whole appliance is light weight, sets up in seconds, and is very stable. I paid $89 at Costco, which sure beats the $250 Weck electric canner I’d been eyeing for years (and which never seems to be in stock). The only downside is that water can take a long time to boil. Cold water set to boil at 212 degrees takes an hour. Hot water set to the highest temperature takes 30 to 45 minutes (depends on how hot the tap water is). Just plan your canning accordingly: set up the boiler first, then start your cooking. Once the water reaches a boil, adjusting the temperature up or down is rapid. I have more temperature control with this device than I did with a stovetop water bath canner. I really like this appliance, and some day I might even use it for cooking!
