Have owned an appreciated the Big Green Egg for about six months now. I think claims of being easy to light and ready in ten minutes may not be exactly accurate, but with a little practise and reading, it is easy to use and food turns out great. Everything comes out juicy and smokey and it is easy to adjust smoke flavor by adding more or fewer wood chips. No more dried out and burned chicken.

A great resource is the website: www.nakedwhiz.com (safe despite odd name) put together by a major Egg supporter. A must read. After exploring this site, you’ll be familiar with the nuances of charcoal which I had never used before. Now I can dial in whatever temperature I want pretty quickly, but my wife still struggles with it from time to time.

I found that lighting is best done with a small amount of lighter fluid and a starter cube. Until you have mastered the Egg, give yourself lots of extra time to cook. I use regular lump charcoal, avoid briquettes.

You should be cautious when cooking at high temperatures while wearing sandals. I had a small piece of very hot charcoal shoot out of the bottom and land on my foot. A mat may be a good idea on a wood deck.
